Remaining yield includes bones (optional), offal (optional), suet for tallow (optional), and natural trimming loss.
Cut specifications are agreed directly with the butcher at processing time, allowing you to tailor steak thickness, roast sizes, mince vs burgers, and specialty cuts to your preference. If you wish to use one of our partner butchers, the standard butchering fee is €175 and can be added to your purchase on the shop section of our site.
