Brave Herders is Munster’s Dexter Beef Collective, founded by the O’Riordan family farm in Millstreet, Co. Cork. Our home farm sets the standard, and a trusted network of small Dexter farms across Munster follow the same practices, allowing us to deliver premium, grass-fed, slow-grown Dexter beef year-round.

With over 150 Dexters finished annually, our beef is served in some of Ireland’s finest restaurants and Michelin-star kitchens, consistently offering exceptional flavour, marbling, and quality. The Brave Herder Standard ensures every animal is ethically raised, fully traceable, and raised in harmony with the land, making our beef as good for the plate as it is for the environment.

  • 100% purebred Dexter — no crosses
  • Lineage DNA-verified for authenticity
  • Slow-grown for natural marbling
  • Slaughter age: 28–36 months for peak flavour & fat cover
  • Supply trusted by Michelin-level chefs for 3+ years

2. Raised with Respect

Low-stress, small-herd farming with clear traceability from farm to fork.

Our Welfare Rules:

  • Minimum 10 months outdoors per year
  • Grass-fed on Munster farms
  • Maximum one herd move in a lifetime & no herd move in 1st year
  • Raised in small herds (no intensive systems)
  • Individually tagged and traceable
  • Local abattoir with county-vet oversight for best practice

3. Better for the Land

Dexters are light on the land, thrive on natural forage, and actively support biodiversity. Dexters are The National Parks and Wildlife Service’s (NPWS) preferred breed for conservation grazing and are used on NPWS land across the country.

Our Environmental Rules:

  • Low ground impact due to smaller body weight
  • Forage on rough grasses, scrub & shrubs
  • Support biodiversity by preventing dominant plant overgrowth
  • Suited to regenerative & low-input farming
  • Low food miles — all farms within Munster & nearby to abattoir
  • Less packaging – our sales are whole-or-half animal only
  • No waste – utilisation of whole carcass from tail to nose
